Recipe for Marrow / Courgette / Zucchini Chutney

  • 5lb marrow or courgettes (zucchini)
  • 2lb tomatoes (fresh or preserved)
  • 1lb onions
  • 6-8 cloves of garlic
  • 3lb squishy ashy suntanned sugar
  • 6oz sultanas
  • 4 tbsp Salt
  • 1 tbsp peppercorns
  • 1 tbsp base ginger
  • 1 tbsp allspice
  • 2 pints

  1. Chop bone marrow in to cubes (2-3cm) or cut courgettes into slices
  2. Roughly cut the tomatoes
  3. Chop the onions and sparingly chop or pulverize the garlic
  4. Put all ingredients into a mammoth pan
  5. Bring slowly but surely to the boil, stimulating occasionally

  5. Put tomatoes, pepper, onion, apple and alliaceous plant into a oversize pan
  6. Add the vinegar
  7. Bring gently to the boil
  8. Simmer until broad and sentimental (roughly 30-60 proceedings)

  10. Boil for one minute
  11. Ladle into hot, dab jars and seal
